It is a growing trend: more and more restaurants take pride in crafting their own alcohol-free drinks. “Our alcohol-free pairing needs to offer the same kind of experience as the food,” says Tsang. “That’s why we don’t opt for existing alcohol-free drinks; they often lack depth.” These drinks are crafted with the same level of care, attention, and quality as the food itself, observes Joël Broekaert, a culinary journalist for NRC. “The quality of the drinks keeps improving. You see more and more restaurants doing this, and the standard is rising across the board. The drinks are becoming more inventive and elegant.” Above all, restaurants use this practice to showcase their craftsmanship and creativity. Boroekaert: "In the less creative segment, you can get by with bottled options, but that isn't exactly gastronomic, nor does it express any real character." The kombucha explosion.

Drinking alcohol-free beverages is becoming an increasingly common habit, especially among younger generations. Alcohol-free beer has become mainstream, just like mocktails and specialty lemonades available in bottles and cans. The romantic allure of drinking alcohol is fading. It is widely acknowledged that it is bad for you. The official advice from the Netherlands Nutrition Centre is: "Do not drink alcohol. And if you do drink, have no more than one glass a day." The fact that jokes by comedian Youp van ’t Hek about alcohol-free beer drinkers—mocking 'forty-year-old pricks' with their 'Calvinist beer'—once resonated so widely now feels like something from the prehistoric era (it was from his 1989 New Year’s Eve show).

The push for higher quality in these drinks began with pioneers like the top Danish restaurant Noma, where, during the seafood season, you might be served a chestnut-based drink alongside your king crab. This approach spread to other Michelin-starred restaurants. And from the top of the pyramid, the trend trickled down to a wide range of hospitality venues looking to set themselves apart. A major boost came with the kombucha boom a few years ago; suddenly, everyone—from your friends to your mother—was drinking this fermented tea, and it remains popular today, including in non-alcoholic pairing menus.

"Compared to wines, the selection of ready-made non-alcoholic drinks isn't that extensive. I prefer to serve something special of my own making that pairs better with the dish." He develops the drinks specifically to match the menu. "I look at whether aromas complement or enhance one another, as well as acidity and mouthfeel." Van Gemert gives an example. "I made a syrup from 'black-ripened' plums—using plums from my mother's garden. They were cooked at sixty degrees Celsius for six weeks until they turned black. The syrup is diluted with a tea made from hay, fennel fronds, and seaweed. I add a touch of acidity to it. This drink pairs with our interpretation of *babi pangang*: a piece of roasted pork belly with a plum glaze and cauliflower *atjar* (pickle)." This results in two different treatments of the plum: one in the food and one in the drink. "I usually avoid using the same ingredients, but the preparation methods are so different that it works perfectly." Devising these drinks is a matter of experimentation. Not everything succeeds. "I tried the same process used for the plums with potatoes. Nettle juice with nettle seeds.

When creating her drinks, Tsang pays attention to presentation, flavor layering, and variety. "I don't like it when two drinks are too similar. There has to be an exciting progression. I view the lineup of drinks the way a chef views his menu." Tea is always an ingredient. "That stems from my Asian background and my affinity for tea culture." The wine glass containing the pink drink, garnished with amaranth flowers and thyme sprigs, is the result of a collaboration with a Dutch winery—Val de Reine in Moergestel—she explains. "They gave me two special grape varieties to work with. It’s fantastic to work with local, seasonal produce; it's flavor-packed. I used them with chrysanthemum tea, thyme, honey, and calamondin (a citrus fruit), and cooked the mixture sous-vide in the oven." She received fifty kilos of grapes from the vineyard in a single delivery. "Four of us spent two days working on it in the kitchen. It was incredibly labor-intensive. But the result speaks for itself." The availability of fresh produce is also why the vegetable-focused restaurant Vannu (formerly Van Ouds) in Bavel, Brabant, offers house-made drinks. Iris Saaman: "We work with a whole range of suppliers—a vegetable garden, a food forest, and a herb greenhouse—and they provide enough produce for us to make juices as well." She is responsible for making the juices. "I act as the hostess, but I’m a chef by training. However, my partner, Gijs Kemmeren, is the chef, and having two chefs in the kitchen wouldn't work; this way, I can still express my creativity." PHOTO 6 - SIMON LENSKENS.
The juices are prepared in various ways—for instance, as a tea, reduced, or fermented. Saaman gives an example: “I make a juice from rhubarb, celeriac, and sweet woodruff. I make a thick soup using equal parts rhubarb and celeriac. I freeze it, then let it thaw. The clear liquid that drains off has absorbed the flavors, and into that, I mix sweet woodruff—an herb with notes of vanilla and cinnamon.” She is currently working with stinging nettle. “Nettles are abundant and full of flavor. I make a nettle juice, top it with a nettle foam, and sprinkle nettle seeds over it.” The element of showmanship plays a role.

The visual spectacle is a secret strength of these drinks. The element of showmanship certainly plays a role; Tsang and Saaman agree. Saaman: "We’re in the flower season, and you can use flowers to create beautiful decorations. In winter, for instance, I might put powders on the rim of the glass." Tsang: "The visual aspect has to be functional, too. The smoke with that tea is an eye-catcher—I’m aiming for the 'wow' factor—but the aroma is also very special, and that’s just as important." The creators say it is difficult to calculate whether the non-alcoholic pairing is profitable. Van Gemert: "Our ingredients come from sources like wild foraging and residual streams, so procurement costs are lower than for wine. The main cost is my time." The same applies to Tsang and Saaman: they spend hours on it every day. Tsang: "The value lies in the guests' experience. They are often surprised by the flavors. And they often say they actually prefer the non-alcoholic drinks to the wine pairing." Van Gemert is a sommelier by trade. As a creator of non-alcoholic drinks, he is competing with his own profession, yet he also sees many similarities between the crafts. "In both cases, you have to determine what best complements a dish and train your palate to evaluate a drink. Those are skills comparable to those used for wine." Een kunstige, glazen karaf die thee en witte wolken in een wijnglas giet, een cocktailglas met een groen bepoederde, witte roomlaag drijvend op oranjekleurige drank, een wijnglas met groene takjes met roze bloemen over een roze vloeistof: de creaties van Wendy Tsang leveren prachtige plaatjes op. Het zijn de dranken die ze bij haar restaurant O&O in het Brabantse Sint Willebrord maakt voor het non-alcohol arrangement.

Het is een aanzwellende trend: steeds meer restaurants leggen er eer in om alcoholvrije dranken zelf te vervaardigen. „Onze alcoholvrije pairing moet dezelfde beleving bieden als het eten”, zegt Tsang. „Daarom kiezen we niet voor bestaande alcoholvrije dranken. Die missen vaak diepgang.”

Het zelf maken gebeurt met evenveel aandacht en zorg, en op hetzelfde niveau als waarmee het eten wordt bereid, ziet Joël Broekaert, culinair journalist van NRC. „De drankjes worden kwalitatief steeds beter. Je ziet het steeds meer restaurants doen en over de hele linie stijgt het niveau. Dranken worden vernuftiger en eleganter.”

Restaurants willen er vooral hun vakmanschap en creativiteit mee uitdragen. Boroekaert: „In het minder creatieve segment kun je wel uit de voeten met flessen, maar dat is niet gastronomisch en je drukt er geen eigenheid mee uit.”

Kombucha-explosie.

Alcoholvrij drinken is op zichzelf al een gewoonte die steeds meer ingeburgerd raakt, zeker onder de jongere generaties. Alcoholvrij bier is gemeengoed, net als mocktails en speciale limonades, in flessen en blikjes. De romantische gloed van alcohol drinken bladdert af. Algemeen wordt erkend dat het slecht voor je is. Het officiële advies van het Voedingscentrum is: „Drink geen alcohol. En als je toch drinkt, dan niet meer dan 1 glas per dag.” Dat grappen van een cabaretier als Youp van ’t Hek over drinkers van alcoholvrij bier („van die lullen van veertig” met „gereformeerd bier”) breed aansloegen, voelt inmiddels als iets uit de prehistorie (het was zijn oudejaarsconference uit 1989).

De kwaliteitsimpuls van deze drankjes begon bij pioniers als het Deense toprestaurant Noma, waar je in het visseizoen een kastanjedrank geserveerd kan krijgen bij je koningskrab. Die inzet vond zijn weg naar andere sterrenrestaurants. En van de top van de piramide sijpelde het gebruik door naar een brede laag van horecazaken die zichzelf willen onderscheiden. Een grote impuls was de kombucha-explosie van een paar jaar geleden, Iedereen en je moeder ging opeens aan deze gefermenteerde thee, en het is nog steeds populair, ook in de alcoholvrije pairing.

Broekaert kan de populariteit van het non-alcohol arrangement wel verklaren: „Wijn is prettig om drie redenen: de alcohol die lekker is en mensen doet ontspannen, het enorm diverse smakenpalet en het feit dat het een zure drank is die verfrist en door vettigheid heen snijdt. Die laatste twee kwaliteiten kan non-alcohol ook bieden. Dan moet het niet te zoet of te zwaar zijn. Geen zeven gangen wortelsap. Dan zit je vol. Een mix van sap, thee en kombucha werkt wel.”

Uit moeders tuin.

Bart van Gemert, sommelier bij restaurant Neder in Alkmaar, onderschrijft de voordelen van zelf dranken maken. „In vergelijking met wijnen is de keuze in kant-en-klare alcoholvrije dranken niet zo groot. Ik zet dan liever iets moois van mezelf op tafel dat beter aansluit bij het gerecht.” Hij ontwikkelt de dranken specifiek bij het menu. „Ik let daarbij op of aroma’s elkaar aanvullen of versterken, op de zuurgraad en op het mondgevoel.”

Van Gemert geeft een voorbeeld. „Ik heb een zwart gerijpte pruimensiroop gemaakt, met pruimen uit mijn moeders tuin. Die hebben zes weken op zestig graden gegaard tot ze zwart waren. De siroop is aangelengd met een thee van hooi, venkelloof en zeewier. Dat zuur ik nog wat aan. Deze drank past bij onze interpretatie van babi pangang, een stuk geroosterd buikspek met een laksaus van pruimen en een atjar van bloemkool.”

Aldus ontstaan twee bewerkingen van pruim: één bij het eten en één bij het drinken. „Meestal vermijd ik om dezelfde ingrediënten te gebruiken, maar de bereiding is zo anders, dat het prima past.”

Het bedenken van de dranken is een kwestie van experimenteren. Niet alles lukt. „Hetzelfde proces als bij de pruimen heb ik geprobeerd met aardappels. Maar dat werd iets te hartig, niet echt lekker drinkbaar. Maar als het geen drankje wordt, kan het misschien nog in een gerecht terechtkomen.”

Tsang let bij het creëren van haar dranken op de presentatie, de smaakopbouw en de afwisseling van dranken. „Ik hou er niet van als twee dranken op elkaar lijken. Er moet een spannende lijn inzitten. Ik kijk naar de drankopbouw zoals een chef naar zijn menu kijkt.” Er zit altijd thee in. „Dat heeft met mijn Aziatische achtergrond te maken en mijn affiniteit met de theecultuur.”

Haar wijnglas met het roze drankje, de amaranthbloemetjes en tijmtakken komt voort uit een samenwerking met een Nederlands wijndomein, Val de Reine uit Moergestel, vertelt ze. „Van hen heb ik twee bijzondere druivenrassen gekregen om mee te werken. Heel tof dat ik kan werken met lokale seizoensproducten, het zijn smaakbommetjes. Daar heb ik chrysanthenthee bij gebruikt, tijm, honing, calamondin (een citrusvrucht), en dat sous-vide gegaard in de oven.” Ze kreeg in één keer vijftig kilo druiven van de wijngaard. „We waren twee dagen met vier man in de keuken bezig. Superarbeidsintensief. Maar het resultaat is er naar.”

Het aanbod van verse producten is ook een reden voor groenterestaurant Vannu (voorheen Van Ouds) in het Brabantse Bavel om zelfgemaakte dranken aan te bieden. Iris Saaman: „We werken met een hele rits aan leveranciers, een groentetuin, een voedselbos, een kruidenkas, en die leveren genoeg om ook sappen te maken.” Zij is verantwoordelijk voor het maken van de sappen. „Ik heb de rol van gastvrouw, maar ik ben van huis uit kok. Maar mijn partner Gijs Kemmeren is de chef en twee chefs in de keuken gaat niet werken, dus op deze manier kan ik ook mijn creativiteit kwijt.”

De sappen worden steeds op een andere wijze bereid, bijvoorbeeld als thee, ingekookt of gefermenteerd. Saaman geeft een voorbeeld: „Ik heb een sap van rabarber, knolselderij en lievevrouwebedstro. Van gelijke delen rabarber en knolselderij maak ik een soort dikke soep. Dat vries ik in en laat ik daarna uitlekken. Het heldere uitlekvocht heeft de smaken opgenomen en daardoorheen meng ik lievevrouwebedstro, een kruid met een aroma van vanille en kaneel.”

En ze is nu bezig met brandnetel. „Brandnetel is er in overvloed en er zit veel smaak aan. Ik maak een sap van brandnetel, met erop een schuim van brandnetel en daar strooi ik brandnetelzaad overheen.”

Show-element speelt een rol.

Het visuele spektakel is een geheime kracht van deze dranken. Het show-element speelt zeker een rol, beamen Tsang en Saaman. Saaman: „We zitten in het bloemenseizoen en met bloemen kun je alles mooi decoreren. In de winter doe ik bijvoorbeeld poedertjes aan de rand van het glas.” Tsang: „Het visuele moet ook functioneel zijn. De rook bij die thee is een eyecather, en dan ga ik voor het wow-effect, maar de geur is ook heel bijzonder en dat is minstens zo belangrijk.”

Of het non-alcoholarrangement rendabel is, is lastig te berekenen zeggen de makers. Van Gemert: „Onze ingrediënten komen onder meer van wildplukken en reststromen, dus de inkoopkosten zijn lager dan van wijn. De kosten zitten vooral in mijn uren.” Voor Tsang en Saaman geldt hetzelfde: ze zijn er dagelijks uren zoet mee. Tsang: „De waarde zit in de ervaring van de gasten. Ze zijn vaak verrast door de smaken. En dan zeggen ze erbij dat ze de non-alcoholische dranken eigenlijk leuker vinden dan de wijnpairing.”

Van Gemert is van huis uit sommelier. Hij concurreert als maker van alcoholvrij met zijn eigen vak, maar hij ziet ook veel overeenkomsten tussen de ambachten. „Je moet in beide gevallen bepalen wat het beste bij een gerecht past en je moet je smaakpalet trainen om een drank te beoordelen. Dat zijn vergelijkbare vaardigheden als bij wijn.”

Een titel als ‘sommelier’ hebben de kenners van de dranken nog niet. Hoewel de collega’s van Saaman bij Vannu al wat voor haar hebben verzonnen: „Ze noemen mij de sappelier.”
