Hi Wendy, in restaurant-speak, 'pairing' means matching a dish in a meal with a wine, e.g., a fish dish with a white wine, such as a Sauvignon Blanc, or a meat dish, e.g., filet mignon, with a red wine, e.g., Bordeaux. In this article, the dishes are matched with a compatible non-alcoholic drink, invented by the restaurant 'sappelier '; in Dutch, ' sap' stands for 'juice' in English. And just as a 'sommelier' in France is a wine expert working in a restaurant setting, a 'sappelier' (made-up term) is the expert for non-alcoholic beverages. Never heard the term myself, but it seems to be a new trend for restaurants to concoct their own non-alcoholic beverages and pose themselves or an employee as a 'sappelier.'
