On point # 2 how about "I do know..."? I like that better.

Two things here:
1.) "Jeg vet nok," - That word "nok" is used very commonly in norsk, both as an adjective and as an adverb, e.g. "du forstår meg nok" - "I'm sure you understand me", "det kan du nok si" - "you may well say that", etc. Here for "Jeg vet nok" I suggest "I surely know".
2.)I would prefer "large" for "stort" rather than "big" as "large" indicates expanse. Life is expansive and wide. "I surely know that life is very large and rich outside.
